I decided to add a "Healthy Life" section to my blog to share things I've learned and have put into practice along the way to losing weight (40+ pounds), getting in shape (mentally and physically) and trying my best to live an all around healthy life. *I am not a Doctor, I'm just sharing things that have worked for me. Please do research and consult with your Doctor for things you will implement in your own life.*
The reason for this new section...since I lost 40 pounds this past year (you can read more about that here) some of my family and friends have asked me how I'm doing it (it's a journey that continues) and what are some great, healthy recipes. So under the "Healthy Life" tab of my blog you can find a log of things I'm trying and that have helped me...hopefully lots of inspiration. I also added a few resources for you at the bottom of this post.
I also keep pretty regular fun updates on Instagram...which I really just started using a few days ago.
So here's a start...Recipe #1! Yay!
Let's call it Delightful Fresh Vegan Summer Salad (also amazing in the winter, just had it, LOVE IT)
The quick iPhone photo below shows a delicious meal I made by just combining things I love. I like to make a big batch for throughout week. The only cooked ingredient is the quinoa. Put the quinoa in the fridge to cool after cooking. Mix in separate bowl a few cups of cherry tomatoes sliced, 2 cloves garlic crushed, chopped green onion, few cucumbers peeled and cubed, fresh squeezed juice from one lemon, tablespoon extra virgin olive oil, Himalayan sea salt, pepper...mix and then stir everything in with the quinoa. Add 1/2 sliced avocado on the side to your serving. YUM!
